Maple Granola

1 cup thick rolled oats (Bob’s Red Mill GF)

1 cup quick oats (Bob’s RTed Mill GF)

1 cup shredded coconut

1/4 cup coconut oil, melted

1/3 cup maple syrup

1 teaspoon vanilla

Pinch of Celtic sea salt

Preheat oven to 300 F.

Combine oil, maple syrup, vanilla, and salt in a bowl. Add oats, and coconut, and mix well. Spread the mixture in an even layer on a parchment-lined cookie sheet.

Bake in preheated oven until golden brown, about 20 minutes. Stir after 10 minutes.

Remove from the oven and let cool completely. Store in an airtight container.
