Coconut Granola

2 cups rolled oats

1 cup shredded coconut

1 cup slivered almonds (optional)

1/4 cup oil, coconut or ghee, melted

1/3 cup maple syrup or honey

1 teaspoon vanilla

Pinch of Celtic sea salt

1/4 teaspoon cinnamon

Juice and zest of 1/2 lemon

Preheat oven to 250 F.

In a bowl, combine oil, maple syrup, vanilla, salt, cinnamon, lemon juice, and zest. Add oats, coconut, and almonds, and mix well. Spread the mixture in an even layer on a parchment-lined cookie sheet.

Bake in preheated oven until golden brown, about 45 to 55 minutes, stirring every 15 minutes. Remove from oven and let cool completely. Store in an airtight container.

Tip:

You can add 1/2 cup of raisins or chopped dates.
