Banana Muffins

2 cups flour (I used 1 cup almond flour and 1 cup all-purpose GF flour)

1 1/2 cups rolled oats

1/2 teaspoon baking soda 

1/4 teaspoon Celtic sea salt

1/2 teaspoon cinnamon 

1/4 teaspoon nutmeg 

2 eggs

1/3 cup ghee or coconut oil

1/2 teaspoon vanilla 

1/4 cup maple syrup

3 bananas, peeled

5 dates, chopped 

 

 

Preheat the oven to 350 F. 

Put flour, oats, baking soda, salt, cinnamon, and nutmeg in a food processor and pulse for 1 minute.

Add eggs, ghee, vanilla, maple syrup, and bananas. Pulse until well combined.  

Scoop batter into a paper-lined muffin pan. Add a few pieces of the diced date on top of each muffin.

Bake at 350 for 25 minutes, or until a toothpick inserted in the center comes out clean.
