Nut Butter Granola

4 cups gluten-free rolled or quick oats
1/2 cup nut butter (almond, peanut, cashew, hazelnut)
1/3 cup maple syrup or honey
1/4 cup ghee or coconut oil 
1 teaspoon vanilla extract
1/2  teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon Celtic sea salt 

Preheat oven to 325 F. Add oats to a parchment paper-lined baking sheet. 
In a saucepan, over medium heat, combine the nut butter, maple syrup, ghee, and vanilla, and stir well. Pour the mixture over the oats, and add cinnamon, nutmeg, and salt, stir well. Spread the mixture to an even layer. Bake for 30 minutes. Let cool completely before eating.

Enjoy the granola with your choice of milk and fresh berries!
