Arugula Pesto
4 cups arugula
1/4 cup sunflower seeds or pine nuts
1 tablespoon lemon juice
1/3 cup parmesan, grated (optional)
3 garlic cloves
1/2 cup olive oil, (add more if needed)
Celtic sea salt and black pepper to taste
Put all the ingredients in a food processor and process for 1 minute.
Pesto is great on salads, with cut-up celery and carrots, wraps, sandwiches, and pasta.....
