Ginger Kale Soup (with ground pork)
1 tablespoon olive oil or avocado oil
1 large onion, diced
6 garlic cloves, minced
1-inch ginger, minced
1 teaspoon cumin
1 lb organic ground pork
1/4 teaspoon Herbamare (add more if needed)
1/4 teaspoon red pepper flakes
4 stalks of celery, diced
3 carrots, diced
2 red skin potatoes, peeled and diced (optional)
1 bunch Lacinato kale, chopped
2 teaspoons gluten-free Tamari sauce
6-8 cups water (depending on how thick you like your soup)
In a big soup pot, heat the oil on medium heat. Add onion, garlic, ginger, and cumin, and sauté for 3 minutes.
Add pork, Herbamare, and red pepper flakes and cook for 10 minutes.
Stir in celery, carrots, potatoes, kale, tamari, and water.
Bring to a simmer and cook for 25 minutes.
