Roasted Rainbow Fingerling Potatoes
1 pound fingerling potatoes, scrubbed, halved lengthwise
2 tablespoons olive oil
Celtic sea salt and black pepper to taste
Preheat oven to 375°F.
Toss all the ingredients together in a bowl.
Line a baking sheet with parchment paper.
Spread potatoes in a single layer on the baking sheet.
Bake until tender and crispy, 25 to 30 minutes.
