Roasted Rainbow Fingerling Potatoes 

1 pound fingerling potatoes, scrubbed, halved lengthwise
2 tablespoons olive oil
Celtic sea salt and black pepper to taste


  • Preheat oven to 375°F. 

  • Toss all the ingredients together in a bowl.

  • Line a baking sheet with parchment paper.

  • Spread potatoes in a single layer on the baking sheet.

  • Bake until tender and crispy, 25 to 30 minutes.
