GF Oatmeal Cookies

 

 1 cup blanched almond flour 

1 cup gluten-free quick oats 

1 pinch of Celtic sea salt

1/4 cup coconut oil, melted

1/4 cup maple syrup 

5 drops stevia (optional)

1 teaspoon pure vanilla extract

Berry jam 


- Preheat oven to 350 F.
- In a bowl, combine well almond flour, oats, salt, coconut oil, maple syrup, stevia, chia seeds, and vanilla. 
- Using your hand, scoop up small balls and then place them on a parchment-lined cookie sheet, press a dent into each ball and fill with 1/2 teaspoon of jam. 
- Bake for 10 - 15 minutes. 

Tips:
Add some crushed walnuts or cinnamon. 
If the batter is too dry add some more maple syrup or coconut oil or a splash of water.
