Peanut Butter Cookies 


1/2 cup crunchy peanut butter

1 egg, whisked

1/4 cup maple 🍁 syrup

1/2 teaspoon vanilla extract,

1 tablespoon coconut oil

1/3 cup gluten-free quick oats

1/4 teaspoon baking soda

Pinch of Celtic sea salt

Chocolate chips (I use dark HU Gems)

Preheat the oven to 350 F. 
Combine all the ingredients together but the chocolate chips.
Scoop about 1 tablespoon of dough onto the baking sheet and flatten with a fork. 
Press one chocolate chunk into the center of each cookie. 
Bake for 10 minutes.
Let it cool before serving.
