Sun-dried Tomato Hummus

1 can chickpeas, drained (I like to use Eden's brand)

Juice of 1 lemon

1-2 garlic cloves

2 tablespoons tahini

1/4 cup olive oil

6  sun-dried tomatoes

Celtic sea salt and black pepper to taste

 

- Put all the ingredients into a food processor and process until smooth.
