Cinnamon Pear Cake

 

2 cups almond flour

2 teaspoons cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon baking soda

1/2 teaspoon Celtic sea salt

1/4 cup honey

10 drops of stevia, optional

1/3 cup coconut oil, melted

3 organic eggs, whisked 

1/4 cup of black currants or raisins 

1 pear, thinly sliced 

1/4 cup almonds, crushed 

                                                                                                
- Combine almond flour, cinnamon, nutmeg, baking soda, and salt in a bowl.
- In a separate bowl, combine honey, stevia, coconut oil, and eggs.
- Combine wet ingredients with dry ones.
- Stir in black currants and nuts.
- Pour the batter into a greased pie pan.
- Top with thinly sliced pears.
- Bake at 350 for 40 minutes.
