Cinnamon Mini Muffins  

2 bananas

4 eggs

6 dates, pitted

1 teaspoon pure vanilla extract

1/3 cup coconut oil, melted

1 tablespoon maple syrup 

2 1/2 cups almond flour

1/2 teaspoon baking soda

1 teaspoon cinnamon

Pinch Celtic sea salt


- Preheat the oven to 350F.
- Put bananas, eggs, dates, vanilla, coconut oil and maple syrup in a food processor and pulse for 1 minute. 
- Add in almond flour, baking soda, cinnamon, and sea salt and pulse until blended well.  
-Scoop batter into a paper-lined mini muffin pan.
- Bake for 15 - 20 minutes.
- Let cool for 1 hour before serving.
