Elderberry Syrup

1 cup dried elderberries
2 inches fresh ginger root, peeled and chopped
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
3 cups water
1/3 cup honey

- Put elderberries, ginger, cinnamon, cloves, and water in a pot and bring to a boil. Turn the heat down and simmer for 30 minutes.

 - Turn the heat off and let it cool to room temperature. Strain and discard the solids. Stir honey into the elderberry syrup and mix well.
- Store in a glass container in the fridge.

Tip: I take 1 teaspoon of elderberry syrup a day during the cold season to boost my immune system. It tastes so delicious.
